George Chung is one of the creators of El Infusista in 2018. As Chung explains, its principles are based on looking at health holistically, taking into account the physical, emotional, mental and spiritual. So, with the different cocktails and snacks they offer, they try to promote not only how delicious and well thought out each drink is, but also the impact this medicine has on the world.

We decided to visit this healing “temple” on a Saturday to see what a typical night’s movement was really like. We arrived at 8pm and there were already diners: from well-known customers to diners eager to try one of the classic cocktails or a new menu.

We could tell you about every cocktail we enjoyed, but we’ll limit ourselves to mentioning our favorites. The result is a refreshing, light cocktail with a mild taste of the aforementioned fruit. The decorative touch is provided by Chocolate of Perpetual Suffering, golden in colour, with lychee filling.

Loved the night Hua Tuo anesthetic, which combines bourbon, aperitif, puerh tincture, orange and lemon golden shrub, and citrus juices. Interestingly, the cocktail was inspired by the first physician to use an anesthetic, a mixture of wine and spices called maffeison. Its aim is to transmit almost tranquil characteristics through an interesting and complex cocktail in its taste.

The snack menu has changed a lot, with long-cooked stews, stir-fries and comfort food reminiscent of home. First selected Zhao Shen’s Homey Stew, in which beef brisket is braised for 5 hours in a delicious base. It is served with white rice, bachike sauce and pak choi with a touch of vegetables.

Baijiu, a highly alcoholic Chinese spirit, is used in this drink. It can be made from different grains, resulting in a powerful liqueur with fruity flavors, especially pear. Luckily, we were able to try it ourselves – carefully and a little bit – to get to know this curious brewery, and we’ll undoubtedly be back.

Another innovation that El Infusionista brings for this new season is the visit to foreign breweries.
